½cuptahini
¼cupolive oilextra virgin
2clovesgarlicpeeled
1lemonjuice of lemon
salt to taste
black pepper to taste

1tbspparsleychopped, to garnish

INSTRUCTIONS
Put the chickpeas, tahini, cumin or paprika, oil, garlic and lemon juice in a food processor, sprinkle with salt and pepper and begin to process; add water as needed to produce a smooth purée.
Using a plastic spatula, scoop out into a serving plate. Drizzle with olive oil, sprinkle with cumin and paprika (turmeric, cayenne and/or zaatar can also be used) then garnish with chopped parsley.
