DESCRIPTION

Sephardic keftes (also known as keftikes) are leek patties that are eaten at Rosh Hashanah, Hanukkah and Passover (for Passover substitute matzo meal for the breadcrumbs).

INGREDIENTS
 

Ingredients:

  • 2 leeks (trimmed and cleaned)
  • 1 egg
  • 1/3 tsp salt
  • 1/4 cup breadcrumbs
  • 1 potato
  • vegetable oil (to fry)

INSTRUCTIONS
 

Instructions

  • Trim and wash leek very carefully as they can hold a lot of sand.  Soak and rinse a few times.  
  • Peel the potato and slice it and the leeks and place in a large pot with water, cover and bring to boil. Remove from heat and let stand 5 minutes, then drain. 
  • Place all the leeks, potato, egg, salt and breadcrumbs into a food processor and blend until the mixture is blended.
  • Put about 1/2-inch of oil in a frying pan over medium heat.
  • Scoop out an egg-sized amount of mixture, form into a ball then flatten into a patty. Repeat until all the mixture is used.   
  • Gently place each patty into the frying pan and cook for 5 minutes (or until golden) then turn over and cook for another 5 minutes or until golden and crispy.
  • Transfer to a paper towel-lined plate and serve immediately (or keep warm in a 200 degree F oven).
