  • Easy to Make: Despite its impressive taste, this flan is surprisingly simple to prepare. With minimal ingredients and straightforward steps, it’s a dessert that anyone can master.

Ingredients for Orange-Almond Passover Flan

  • 3/4 cup sugar
  • 1 cup blanched almonds
  • Grated zest of 1 orange
  • 7 eggs
  • 1 ¼ cups orange juice
  • 3 tablespoons brandy or kosher-for-Passover liquor (optional)

How to Make Nancy’s Orange-Almond Passover Flan

Step 1: Prepare the Caramel

In a metal flan mold, add 4 tablespoons of sugar. Heat over medium heat, stirring constantly until the sugar melts and turns dark brown. Once the sugar is melted, carefully add 1 ½ tablespoons of boiling water and stir. Quickly coat the sides of the mold with the caramelized sugar. Let it cool and set aside.

Step 2: Blend the Almonds and Ingredients

In a blender or food processor, grind the almonds until they form a fine texture. Add the remaining sugar, orange zest, and eggs. Blend well until smooth. Add the orange juice and brandy or liquor (if using), and blend again to combine.

Step 3: Bake the Flan

Pour the egg and orange juice mixture into the prepared mold. Place the mold into a larger pan filled with water (about halfway up the sides of the mold). Bake in a preheated oven at 350°F (175°C) for approximately 1 ¼ hours, or until set. For the first hour, cover the mold with a lid or aluminum foil.

Step 4: Chill and Serve

Once baked, let the flan cool completely at room temperature. Refrigerate for a few hours to allow it to set further. Before serving, run a knife around the edge of the mold, turn it upside down, and serve on a platter.

Tips for the Perfect Passover Flan

  • Use fresh oranges: For the best flavor, be sure to use fresh orange juice and zest.
  • Optional brandy: Adding a splash of brandy or a kosher-for-Passover liquor can elevate the flavor, but it’s completely optional.
  • Caramelizing the sugar: Be sure to watch the sugar closely as it melts to avoid burning.
