2cupsspinach leavestrimmed
2green onionsjulienne
3eggs
3tablespoonsflour
2tablespoonsmilk
salt & pepperto taste
ground nutmegif desired

Wash the spinach leaves well. Then, loosely chop into pieces. Place in bowl.
Julienne the green onions and add to the bowl.
In a separate bowl, scramble the eggs with a little milk and rest of ingredients.
Pour the egg mixture into vegetables and let sit 5 minutes.
Add oil and heat frying pan to medium heat.
Using a tablespoon, scoop the mixture and drop by tablespoons into hot oil.
