Moroccan kefta notches up the typical plain hamburger.
Moroccan Kefta
Equipment
- Charcoal grill
DESCRIPTION
INGREDIENTS
- 3 lbs ground beef
- ½ cup beef fat (or olive oil)
- 2 tablespoon water
- ½ cup oil
- ½ teaspoon salt
- 1 teaspoon cumin
- ½ tsp cayenne pepper
- 1 tsp paprika
- 1 bunch parsley (rinsed and ground)
- 6 cloves garlic (peeled and ground)
INSTRUCTIONS
- Mix together the garlic, parsley, ground beef, beef fat, spices and salt.
- Add water and oil to the mixture. Shape the meat into meatballs 2 to 3 inches in diameter that you flatten with the palm of the hand to form a “Kefta.”
- Grill for 5 minutes each side or until kefta is firm. Optional: Broil in oven on second to the top rack for 5 minutes each side.
Notes
Serve with a salad such as “Merk-hzeena.”
